Vegetarians, Who Sometimes Eat Meat, Courted by Food Industry

Harold Huff, a researcher at the University of Missouri, shows off the artificial meat product he makes in his lab. (Jeremy Bernfeld / HPM)

By most estimates, only about 2 or 3 percent of Americans are vegetarians. But more than 40 percent of Americans -- aged 18 to 29 -- choose to go meatless at least once a week.  That's the market the food industry is going after with new vegetarian products that mimic the flavor... and the texture... of meat.  Harvest Public Media’s Jeremy Bernfeld (“BURN-fell-d”) has the story.
